Ingredients:  

Main Ingredients

  • 4 cups mashed potatoes cooled
  • 1/4 cup butter melted
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 2 cups all-purpose flour

Instructions: 

  • 1. In a large bowl, combine the mashed potatoes, melted butter, heavy cream, and salt. Mix well.
  • 2. Gradually add the flour to the potato mixture, mixing until a dough forms.
  • 3. Divide the dough into 8 equal portions and roll each into a ball.
  • 4. On a floured surface, roll each ball into a thin circle.
  • 5. Heat a griddle over medium-high heat. Cook each lefse for about 1-2 minutes on each side, until brown spots appear.
  • 6. Serve warm with butter and sugar, or your favorite toppings.

Notes:

Store lefse in an airtight container to keep them soft.
