Instructions:
1. Slice the zucchini into rounds.
2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of breadcrumbs, Parmesan, salt, and pepper.
3. Dredge each zucchini slice in flour, dip in egg, then coat with the breadcrumb mixture.
4. Heat oil in a frying pan over medium heat.
5. Fry zucchini slices until golden brown, about 2-3 minutes per side.
6. Drain on paper towels and serve warm.
Notes:
For extra flavor, add a pinch of garlic powder to the breadcrumb mixture.
