Ingredients:  

Main Ingredients

  • 2 medium zucchini sliced into rounds
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup vegetable oil for frying

Instructions: 

  • 1. Slice the zucchini into rounds.
  • 2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of breadcrumbs, Parmesan, salt, and pepper.
  • 3. Dredge each zucchini slice in flour, dip in egg, then coat with the breadcrumb mixture.
  • 4. Heat oil in a frying pan over medium heat.
  • 5. Fry zucchini slices until golden brown, about 2-3 minutes per side.
  • 6. Drain on paper towels and serve warm.

Notes:

For extra flavor, add a pinch of garlic powder to the breadcrumb mixture.
