Ingredients:  

Main Ingredients

  • 1 lb Boudin sausage
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying

Instructions: 

  • Remove boudin from casing and form into balls.
  • Roll balls in flour, dip in beaten eggs, and coat with breadcrumbs.
  • Heat oil in a pan and fry balls until golden brown.
  • Drain on paper towels and serve hot.

Notes:

Best served fresh and hot.
