Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat
  • 1 lb Pork Shoulder
  • 1 lb Chicken Thighs
  • 2 cups Yuca peeled and chopped
  • 2 cups Plantains peeled and chopped
  • 2 cups Potatoes peeled and chopped
  • 1 cup Corn cut into chunks
  • 1 Onion chopped
  • 4 cloves Garlic minced
  • 1 cup Cilantro chopped
  • 8 cups Beef Broth
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef, pork, and chicken, and cook until browned.
  • Add onion and garlic, and cook until softened.
  • Pour in beef broth and bring to a boil. Reduce heat and simmer for 1 hour.
  • Add yuca, plantains, potatoes, and corn. Simmer for another 30 minutes.
  • Stir in cilantro, salt, and pepper. Simmer for an additional 30 minutes or until all ingredients are tender.
  • Serve hot and enjoy!

This stew is perfect for a cozy family dinner.
