Ingredients:  

Main Ingredients

  • 1 tbsp Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Fresh spinach
  • 4 cups Vegetable broth
  • 1 cup Milk
  • to taste Salt and pepper

Instructions: 

  • Heat olive oil in a pot over medium heat.
  • Add chopped onion and garlic, sauté until soft.
  • Add spinach and cook until wilted.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  • Remove from heat and blend until smooth.
  • Return to pot, stir in milk, and heat through. Season with salt and pepper to taste.

Notes:

Serve hot with a slice of crusty bread.
