Ingredients:  

Main Ingredients

  • 2 tbsp Olive oil
  • 3 cloves Garlic minced
  • 1 head Escarole chopped
  • 2 cans Cannellini beans drained and rinsed
  • 4 cups Chicken broth
  • to taste Salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Add chopped escarole and cook until wilted, about 5 minutes.
  • Add cannellini beans and chicken broth. Bring to a boil.
  • Reduce heat and simmer for 10 minutes. Season with salt and pepper to taste.

Notes:

Serve with crusty bread for a complete meal.
