Ingredients:  

Main Ingredients

  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 800 g Canned tomatoes
  • 2 cups Vegetable broth
  • 1 cup Fresh basil leaves
  • to taste Salt and pepper

Instructions: 

  • Heat olive oil in a pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Add minced garlic and cook for another minute.
  • Add canned tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in fresh basil leaves and cook for another 5 minutes.
  • Use a blender to puree the soup until smooth. Season with salt and pepper to taste.

Notes:

Serve hot with a drizzle of olive oil and a sprinkle of fresh basil.
