Vegetable broth

Fresh basil leaves

Salt and pepper
Instructions:
Heat olive oil in a pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Add canned tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in fresh basil leaves and cook for another 5 minutes.
Use a blender to puree the soup until smooth. Season with salt and pepper to taste.
Notes:
Serve hot with a drizzle of olive oil and a sprinkle of fresh basil.
