Ingredients:  

Main Ingredients

  • 1 cup crab meat picked over for shells
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 4 cups milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup dry sherry

Instructions: 

  • Melt butter in a large pot over medium heat.
  • Whisk in flour and cook for 1-2 minutes.
  • Gradually whisk in milk and bring to a simmer.
  • Add heavy cream, salt, and pepper. Simmer for 10 minutes.
  • Stir in crab meat and sherry. Heat through.
  • Serve hot.

Notes:

For a richer flavor, use half-and-half instead of milk.
