Instructions:
Melt butter in a large pot over medium heat.
Whisk in flour and cook for 1-2 minutes.
Gradually whisk in milk and bring to a simmer.
Add heavy cream, salt, and pepper. Simmer for 10 minutes.
Stir in crab meat and sherry. Heat through.
Serve hot.
Notes:
For a richer flavor, use half-and-half instead of milk.
