Feijoada Brazilian Black Bean Stew Recipe

Ingredients:  

Main Ingredients

  • 1 lb Black beans dried
  • 1 lb Pork shoulder cut into chunks
  • 1 lb Beef chuck cut into chunks
  • 1 unit Onion chopped
  • 4 cloves Garlic minced
  • 2 cups Chicken broth
  • 2 units Bay leaves
  • 1 tsp Cumin
  • to taste Salt
  • to taste Black pepper

Instructions: 

  • 1. Soak the black beans overnight in water.
  • 2. In a large pot, cook the pork shoulder and beef chuck until browned.
  • 3. Add the chopped onion and minced garlic, cook until softened.
  • 4. Drain the soaked beans and add them to the pot.
  • 5. Pour in the chicken broth and add the bay leaves and cumin.
  • 6. Bring to a boil, then reduce heat and simmer for about 2 hours, or until beans are tender.
  • 7. Season with salt and black pepper to taste.
  • 8. Serve hot with rice and orange slices.

Notes:

Feijoada is often served with collard greens and farofa (toasted cassava flour).
