Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup vodka
  • 1 can crushed tomatoes (28 oz)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste salt and pepper
  • 1/4 cup fresh basil, chopped

Instructions: 

  • 1. Heat olive oil in a large saucepan over medium heat.
  • 2. Add the chopped onion and cook until translucent, about 5 minutes.
  • 3. Stir in the minced garlic and cook for another minute.
  • 4. Pour in the vodka and simmer until reduced by half, about 5-7 minutes.
  • 5. Add the crushed tomatoes and bring to a simmer. Cook for 15 minutes, stirring occasionally.
  • 6. Stir in the heavy cream and cook for another 5 minutes.
  • 7. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  • 8. Garnish with chopped fresh basil before serving.

Notes:

This sauce pairs perfectly with penne or rigatoni pasta.
