Ingredients:

  • 4 large sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika

Instructions: 

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • In a mixing bowl, toss the sweet potatoes with olive oil, salt, pepper, and paprika until evenly coated.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.

Notes:
