Ingredients:  

Salad Ingredients

  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1 Red onion, thinly sliced
  • 1 Bell pepper, diced
  • 1/4 cup Fresh parsley, chopped
  • 2 Pita breads, toasted and broken into pieces

Dressing Ingredients

  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Sumac
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions: 

  • 1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  • 2. In a small bowl, whisk together the olive oil, lemon juice, sumac, garlic, salt, and pepper.
  • 3. Pour the dressing over the salad and toss to combine.
  • 4. Add the toasted pita pieces to the salad and toss gently.
  • 5. Serve immediately.

Notes:

For extra flavor, you can add a sprinkle of pomegranate seeds or a drizzle of pomegranate molasses.
