Ingredients:  

Salad

  • 2 cups Shredded Chicken cooked
  • 2 cups Cabbage shredded
  • 1 cup Carrots julienned
  • 1 cup Cucumber sliced
  • 1/4 cup Cilantro chopped
  • 1/4 cup Green Onions sliced

Dressing

  • 1/4 cup Soy Sauce
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 1 tbsp Honey
  • 1 tsp Ginger grated
  • 1 clove Garlic minced

Instructions: 

  • In a large mixing bowl, combine shredded chicken, cabbage, carrots, cucumber, cilantro, and green onions.
  • In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic to make the dressing.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately or refrigerate for later.

Notes:

You can add some chopped peanuts or sesame seeds on top for extra crunch.
