Instructions:
Heat olive oil in a large skillet over medium heat.
Add diced potatoes and cook until they start to soften, about 10 minutes.
Add chopped onion and bell pepper, cook for another 5 minutes.
Stir in sliced kielbasa, garlic powder, paprika, salt, and pepper. Cook until kielbasa is heated through and vegetables are tender, about 5 minutes.
Serve hot.
Notes:
Feel free to add other vegetables like zucchini or mushrooms.
