Instructions:
1. In a large pot, combine apricots, sugar, and lemon juice.
2. Cook over medium heat, stirring frequently, until the mixture thickens and reaches a jam-like consistency, about 45 minutes.
3. Remove from heat and let cool slightly.
4. Transfer the jam to sterilized canning jars and seal.
5. Store in the refrigerator for up to 3 weeks.
Notes:
