Ingredients:  

Main Ingredients

  • 2 pounds apricots pitted and chopped
  • 2 cups sugar
  • 2 tablespoons lemon juice freshly squeezed

Instructions: 

  • 1. In a large pot, combine apricots, sugar, and lemon juice.
  • 2. Cook over medium heat, stirring frequently, until the mixture thickens and reaches a jam-like consistency, about 45 minutes.
  • 3. Remove from heat and let cool slightly.
  • 4. Transfer the jam to sterilized canning jars and seal.
  • 5. Store in the refrigerator for up to 3 weeks.

Notes:

For a smoother jam, you can blend the apricots before cooking.
