Ingredients:  

Main Ingredients

  • 4 medium Potatoes peeled and grated
  • 1 cup Flour
  • 1 cup Buttermilk
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 tbsp Butter for frying

Instructions: 

  • Grate the potatoes and squeeze out excess moisture.
  • In a mixing bowl, combine grated potatoes, flour, buttermilk, baking soda, and salt.
  • Heat butter in a frying pan over medium heat.
  • Spoon the mixture into the pan, forming small pancakes. Cook until golden brown on both sides.
  • Serve hot.

Notes:

Boxty is best served fresh and hot. You can also add some chopped chives or onions for extra flavor.
