Instructions:
Grate the potatoes and squeeze out excess moisture.
In a mixing bowl, combine grated potatoes, flour, buttermilk, baking soda, and salt.
Heat butter in a frying pan over medium heat.
Spoon the mixture into the pan, forming small pancakes. Cook until golden brown on both sides.
Serve hot.
Notes:
Boxty is best served fresh and hot. You can also add some chopped chives or onions for extra flavor.
