Instructions:
1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
4. Add the milk and shredded cheddar cheese. Stir until the cheese is melted and the soup is heated through.
5. Season with salt and pepper to taste. Serve hot.

This soup is great for a quick and easy dinner. You can add more vegetables like carrots or celery if you like.
