Ingredients:  

Main Ingredients

  • 2 medium summer squash chopped
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • to taste salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic, sauté until soft.
  • Add chopped summer squash and cook for another 5 minutes.
  • Pour in vegetable broth, bring to a boil, then simmer for 20 minutes.
  • Blend the soup until smooth. Season with salt and pepper to taste.

Notes:

Garnish with fresh herbs if desired.
