Ingredients:  

Main Ingredients

  • 1 lb Italian sausage casings removed
  • 4 cups chicken broth
  • 3 cups potatoes peeled and diced
  • 2 cups kale chopped
  • 1 cup heavy cream
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • to taste salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove sausage and set aside.
  • In the same pot, add onion and garlic. Cook until onion is translucent.
  • Add chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Return sausage to the pot. Stir in kale and heavy cream. Cook until kale is wilted and soup is heated through. Season with salt and pepper to taste.

Notes:

This soup is perfect for a cozy night in. Serve with crusty bread for a complete meal.
