Instructions:
Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove sausage and set aside.
In the same pot, add onion and garlic. Cook until onion is translucent.
Add chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
Return sausage to the pot. Stir in kale and heavy cream. Cook until kale is wilted and soup is heated through. Season with salt and pepper to taste.
Notes:
This soup is perfect for a cozy night in. Serve with crusty bread for a complete meal.
