Ingredients:  

Main Ingredients

  • 4 cups Chicken broth
  • 2 stalks Lemongrass cut into 2-inch pieces and smashed
  • 3 slices Galangal
  • 3 leaves Kaffir lime leaves torn into pieces
  • 2 cloves Garlic minced
  • 2 Thai chilies crushed
  • 200 grams Shrimp peeled and deveined
  • 1 cup Mushrooms sliced
  • 2 tablespoons Fish sauce
  • 2 tablespoons Lime juice
  • 1 teaspoon Sugar
  • 1 handful Cilantro chopped

Instructions: 

  • 1. Bring the chicken broth to a boil in a pot.
  • 2. Add the lemongrass, galangal, kaffir lime leaves, garlic, and Thai chilies. Simmer for 5 minutes.
  • 3. Add the shrimp and mushrooms. Cook until the shrimp turns pink, about 3-4 minutes.
  • 4. Add the fish sauce, lime juice, and sugar. Stir well.
  • 5. Remove from heat and garnish with chopped cilantro before serving.

Notes:

Adjust the number of chilies to your preferred spice level.
