Ingredients:  

Main Ingredients

  • 2 cups Corn kernels (fresh or frozen)
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Fresh cilantro, chopped
  • 2 tbsp Olive oil
  • 1 tbsp Lime juice
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • 1. In a large mixing bowl, combine the corn, cherry tomatoes, cucumber, red onion, and cilantro.
  • 2. Drizzle with olive oil and lime juice. Season with salt and black pepper.
  • 3. Toss everything together until well combined. Adjust seasoning if needed.
  • 4. Serve immediately or refrigerate for later.

Notes:

For extra flavor, add some diced avocado or a sprinkle of feta cheese.
