Ingredients:  

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup kalamata olives pitted and halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions: 

  • 1. Rinse the quinoa under cold water.
  • 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  • 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
  • 4. In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  • 5. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
  • 6. Pour the dressing over the salad and toss to combine.
  • 7. Serve immediately or refrigerate for later.

Notes:

This salad can be made ahead of time and stored in the fridge for up to 3 days.
