Ingredients:

  • 1 cup shelled pistachios
  • 2 cups mixed greens
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions: 

  • In a large bowl, combine mixed greens, cherry tomatoes, red onion, and feta cheese.
  • Add shelled pistachios.
  • Drizzle with olive oil and lemon juice.
  • Season with salt and pepper.
  • Toss to combine and serve immediately.

Notes:

For extra flavor, you can toast the pistachios lightly before adding them to the salad.
