Instructions:
Cook noodles according to package instructions. Drain and set aside.
In a mixing bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and water until smooth.
Toss the cooked noodles with the peanut sauce until well coated.
Garnish with chopped peanuts and green onions before serving.
Notes:
Feel free to add some veggies or protein like chicken or tofu to make it more filling.
