Instructions:
1. Blend the chipotle peppers, cumin, oregano, garlic, beef broth, and apple cider vinegar until smooth.
2. Place the beef chunks in a slow cooker and pour the blended mixture over the beef.
3. Add the bay leaves, salt, and black pepper.
4. Cover and cook on low for 8 hours, or until the beef is tender and easily shredded.
5. Remove the bay leaves, shred the beef, and mix it with the sauce in the slow cooker.
Notes:
Serve with tortillas, rice, or your favorite sides.
