Ingredients:  

Main Ingredients

  • 3 lbs Beef Chuck Roast cut into large chunks
  • 3 pcs Chipotle Peppers in Adobo Sauce canned
  • 1 tbsp Ground Cumin
  • 1 tbsp Dried Oregano
  • 4 cloves Garlic minced
  • 1 cup Beef Broth
  • 1/4 cup Apple Cider Vinegar
  • 2 pcs Bay Leaves
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste

Instructions: 

  • 1. Blend the chipotle peppers, cumin, oregano, garlic, beef broth, and apple cider vinegar until smooth.
  • 2. Place the beef chunks in a slow cooker and pour the blended mixture over the beef.
  • 3. Add the bay leaves, salt, and black pepper.
  • 4. Cover and cook on low for 8 hours, or until the beef is tender and easily shredded.
  • 5. Remove the bay leaves, shred the beef, and mix it with the sauce in the slow cooker.

Notes:

Serve with tortillas, rice, or your favorite sides.
