Instructions:
1. Preheat your oven to 450°F (230°C).
2. In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, and black pepper.
3. Rub the mixture all over the lamb racks.
4. Place the lamb racks in a roasting pan, bone side down.
5. Roast in the preheated oven for 20-25 minutes for medium-rare, or until the internal temperature reaches 145°F (63°C).
6. Remove from the oven and let rest for 10 minutes before slicing and serving.
Notes:
For best results, use a meat thermometer to ensure the lamb is cooked to your desired doneness.
