Instructions:
1. In a saucepan, melt the sugar over medium heat until it turns golden brown. Pour the caramel into the llanera or baking dish and spread evenly.
2. In a mixing bowl, whisk the egg yolks. Add the condensed milk, evaporated milk, and vanilla extract. Mix well until smooth.
3. Pour the mixture into the caramel-lined llanera or baking dish. Cover with aluminum foil.
4. Steam for about 60 minutes or until the flan is set. Let it cool, then refrigerate for at least 2 hours before serving.
5. To serve, run a knife around the edges of the flan to loosen it. Invert onto a serving plate.
Notes:
For a smoother texture, strain the egg mixture before pouring it into the caramel-lined dish.
