Instructions:
Preheat your oven to 350°F (175°C).
Lightly grease a muffin tin.
In a mixing bowl, whisk the egg whites until slightly frothy.
Add the chopped spinach, bell pepper, onion, and cheese (if using) to the egg whites. Season with salt and pepper.
Pour the mixture evenly into the muffin tin cups.
Bake for 20 minutes or until the egg whites are set.
Let cool slightly before removing from the tin. Serve warm.
Notes:
These bites can be stored in the fridge for up to 3 days. Reheat in the microwave for a quick breakfast.
