Ingredients:  

Main Ingredients

  • 8 pcs Egg whites from large eggs
  • 1 cup Spinach chopped
  • 1/2 cup Bell pepper diced
  • 1/4 cup Onion diced
  • 1/4 cup Cheese shredded, optional
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a muffin tin.
  • In a mixing bowl, whisk the egg whites until slightly frothy.
  • Add the chopped spinach, bell pepper, onion, and cheese (if using) to the egg whites. Season with salt and pepper.
  • Pour the mixture evenly into the muffin tin cups.
  • Bake for 20 minutes or until the egg whites are set.
  • Let cool slightly before removing from the tin. Serve warm.

Notes:

These bites can be stored in the fridge for up to 3 days. Reheat in the microwave for a quick breakfast.
