Instructions:
Preheat your oven to 400°F (200°C).
Place the tomatillos on a baking sheet and roast for about 10 minutes, until they are soft and slightly charred.
Transfer the roasted tomatillos to a blender along with the jalapeño, cilantro, garlic, onion, salt, and lime juice.
Blend until smooth. Adjust seasoning with more salt or lime juice if needed.
Serve immediately or refrigerate for later use.
Notes:
This salsa is great with chips, on tacos, or as a topping for grilled meats.
