Ingredients:  

Soup Ingredients

  • 1 lb ground beef
  • 1/4 cup uncooked white rice
  • 1 egg beaten
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 onion chopped
  • 2 carrots sliced
  • 2 zucchini sliced
  • 1 can diced tomatoes 14.5 oz
  • 6 cups beef broth
  • 1/2 cup cilantro chopped

Instructions: 

  • 1. In a large bowl, mix ground beef, rice, egg, garlic powder, cumin, salt, and pepper. Form into meatballs.
  • 2. In a large pot, bring beef broth to a boil. Add meatballs and reduce heat to a simmer. Cook for 20 minutes.
  • 3. Add onion, carrots, zucchini, and diced tomatoes. Simmer for another 20 minutes until vegetables are tender.
  • 4. Stir in chopped cilantro before serving.

Notes:

Serve with lime wedges and warm tortillas.
