Instructions:
1. In a large bowl, mix ground beef, rice, egg, garlic powder, cumin, salt, and pepper. Form into meatballs.
2. In a large pot, bring beef broth to a boil. Add meatballs and reduce heat to a simmer. Cook for 20 minutes.
3. Add onion, carrots, zucchini, and diced tomatoes. Simmer for another 20 minutes until vegetables are tender.
4. Stir in chopped cilantro before serving.
Notes:
Serve with lime wedges and warm tortillas.
