Instructions:
1. Boil the beets until tender, about 30 minutes.
2. In a pot, combine vinegar, water, sugar, and salt. Bring to a boil.
3. Place beets in a jar and pour the hot liquid over them.
4. Seal the jar and let it cool. Refrigerate for at least 24 hours before serving.
Notes:
Great as a side dish or salad topping.
