Ingredients:  

Main Ingredients

  • 2 cups Tomatoes, diced
  • 1 cup Cucumber, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Parsley, chopped
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • 1. In a large mixing bowl, combine the tomatoes, cucumber, red onion, and parsley.
  • 2. Drizzle the olive oil and lemon juice over the vegetables.
  • 3. Season with salt and black pepper to taste.
  • 4. Toss everything together until well combined.
  • 5. Serve immediately or chill in the refrigerator for later.

Notes:

This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
