Ingredients:  

Main Ingredients

  • 2 cups Garbanzo beans cooked or canned
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/4 cup Red onion finely chopped
  • 1/4 cup Feta cheese crumbled
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice freshly squeezed
  • 1 tsp Dried oregano
  • to taste Salt and pepper

Instructions: 

  • In a large mixing bowl, combine the garbanzo beans, cherry tomatoes, cucumber, red onion, and feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Pour over the salad and toss to combine.
  • Season with salt and pepper to taste. Serve immediately or refrigerate for later.

Notes:

This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
