Ingredients:  

Main Ingredients

  • 2 cups Watermelon, cubed
  • 1 cup Cucumber, sliced
  • 1/4 cup Red Onion, thinly sliced
  • 1/4 cup Feta Cheese, crumbled
  • 2 tablespoons Fresh Mint, chopped
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lime Juice
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions: 

  • 1. In a large mixing bowl, combine the watermelon, cucumber, and red onion.
  • 2. Add the feta cheese and fresh mint to the bowl.
  • 3. Drizzle the olive oil and lime juice over the salad.
  • 4. Season with salt and black pepper. Toss gently to combine.
  • 5. Serve immediately or chill in the refrigerator for 15 minutes before serving.

Notes:

This salad is best served fresh. You can also add a handful of arugula for an extra peppery kick.
