Four Cheese Ravioli

Equipment

  • Ravioli Cutter

Ingredients:  

Dough

  • 2 cups All-purpose flour
  • 3 Large eggs
  • 1 tbsp Olive oil
  • 1 tsp Salt

Filling

  • 1/2 cup Ricotta cheese
  • 1/2 cup Mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup Fontina cheese, shredded
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • 1. In a mixing bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until a dough forms.
  • 2. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
  • 3. In another bowl, mix together all the cheeses, salt, and pepper for the filling.
  • 4. Roll out the dough into thin sheets. Place small mounds of filling on one sheet, cover with another sheet, and cut into ravioli shapes.
  • 5. Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes or until they float to the top.

Notes:

Serve with your favorite pasta sauce.
