Instructions:
1. In a mixing bowl, whisk together egg yolks and sugar until thick and pale.
2. Add mascarpone cheese to the egg mixture and mix until smooth.
3. In another bowl, whip the heavy cream until stiff peaks form. Fold into the mascarpone mixture.
4. Combine coffee and rum in a shallow dish. Dip ladyfingers into the coffee mixture, ensuring they are soaked but not soggy.
5. Arrange a layer of soaked ladyfingers in the bottom of a baking dish.
6. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
7. Dust the top with cocoa powder and grated chocolate. Refrigerate for at least 4 hours before serving.
Notes:
For best results, refrigerate overnight to let the flavors meld together.
