Ingredients:  

Main Ingredients

  • 6 unit egg yolks
  • 3/4 cup granulated sugar
  • 1 cup mascarpone cheese
  • 1 1/2 cup heavy cream
  • 2 cup brewed coffee, cooled
  • 2 tablespoon rum optional
  • 24 unit ladyfingers
  • 2 tablespoon unsweetened cocoa powder
  • 1 ounce dark chocolate, grated for garnish

Instructions: 

  • 1. In a mixing bowl, whisk together egg yolks and sugar until thick and pale.
  • 2. Add mascarpone cheese to the egg mixture and mix until smooth.
  • 3. In another bowl, whip the heavy cream until stiff peaks form. Fold into the mascarpone mixture.
  • 4. Combine coffee and rum in a shallow dish. Dip ladyfingers into the coffee mixture, ensuring they are soaked but not soggy.
  • 5. Arrange a layer of soaked ladyfingers in the bottom of a baking dish.
  • 6. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  • 7. Dust the top with cocoa powder and grated chocolate. Refrigerate for at least 4 hours before serving.

Notes:

For best results, refrigerate overnight to let the flavors meld together.
