Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat cut into chunks
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1 can diced tomatoes (14.5 oz)
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 2 cups potatoes peeled and cubed
  • 2 cups carrots sliced
  • 1 cup kalamata olives pitted and halved
  • to taste salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and brown on all sides. Remove beef and set aside.
  • In the same pot, add onions and garlic. Cook until softened.
  • Return beef to the pot. Add beef broth, red wine, diced tomatoes, oregano, and thyme. Bring to a boil.
  • Reduce heat, cover, and simmer for 1 hour.
  • Add potatoes and carrots. Simmer for another 30 minutes or until vegetables are tender.
  • Stir in kalamata olives. Season with salt and pepper to taste. Serve hot.

Notes:

This stew pairs well with crusty bread or a side salad.
