Instructions:
Heat olive oil in a pot over medium heat.
Add chopped onions and garlic, sauté until translucent.
Add chopped carrots and vegetable broth. Bring to a boil.
Reduce heat and simmer for 20 minutes, until carrots are tender.
Blend the soup until smooth. Season with salt and pepper to taste.
Notes:
For a creamier texture, add a splash of cream before blending.
