Ingredients:  

Main Ingredients

  • 1 kg Carrots peeled and chopped
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • to taste Salt
  • to taste Pepper

Instructions: 

  • Heat olive oil in a pot over medium heat.
  • Add chopped onions and garlic, sauté until translucent.
  • Add chopped carrots and vegetable broth. Bring to a boil.
  • Reduce heat and simmer for 20 minutes, until carrots are tender.
  • Blend the soup until smooth. Season with salt and pepper to taste.

Notes:

For a creamier texture, add a splash of cream before blending.
