Ingredients:  

Main Ingredients

  • 4 cups zucchini, finely chopped
  • 1 cup onion, finely chopped
  • 1 cup green bell pepper, finely chopped
  • 1 cup red bell pepper, finely chopped
  • 2 tbsp salt
  • 1.5 cups sugar
  • 1 cup apple cider vinegar
  • 1 tsp mustard seeds
  • 1 tsp celery seeds
  • 1 tsp turmeric

Instructions: 

  • 1. Combine zucchini, onion, and bell peppers in a large bowl. Sprinkle with salt and let sit for 2 hours.
  • 2. Drain the vegetables and rinse well. Squeeze out excess water.
  • 3. In a large pot, combine sugar, vinegar, mustard seeds, celery seeds, and turmeric. Bring to a boil.
  • 4. Add the drained vegetables to the pot. Return to a boil, then reduce heat and simmer for 30 minutes.
  • 5. Pack the hot relish into sterilized jars, leaving 1/2 inch headspace. Seal and process in a boiling water bath for 10 minutes.

Notes:

Store in a cool, dark place for up to a year. Refrigerate after opening.
