Instructions:
1. Combine zucchini, onion, and bell peppers in a large bowl. Sprinkle with salt and let sit for 2 hours.
2. Drain the vegetables and rinse well. Squeeze out excess water.
3. In a large pot, combine sugar, vinegar, mustard seeds, celery seeds, and turmeric. Bring to a boil.
4. Add the drained vegetables to the pot. Return to a boil, then reduce heat and simmer for 30 minutes.
5. Pack the hot relish into sterilized jars, leaving 1/2 inch headspace. Seal and process in a boiling water bath for 10 minutes.
Notes:
Store in a cool, dark place for up to a year. Refrigerate after opening.
