Instructions:
Rinse the rice under cold water until the water runs clear.
Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
Transfer cooked rice to a large bowl and gently fold in the vinegar mixture with a wooden spoon.
Let the rice cool to room temperature before using for sushi.
Notes:
Make sure not to mash the rice while mixing.
