Ingredients:  

Main Ingredients

  • 2 cups Pineapple chunks fresh or canned
  • 1 cup Diced ham cooked
  • 1 cup Shredded coconut unsweetened
  • 1 cup Chopped macadamia nuts
  • 1 cup Mandarin oranges drained
  • 1/2 cup Green onions sliced
  • 1/4 cup Lime juice freshly squeezed
  • 1/4 cup Olive oil
  • 1 tbsp Honey
  • to taste Salt and pepper

Instructions: 

  • In a large mixing bowl, combine pineapple chunks, diced ham, shredded coconut, chopped macadamia nuts, mandarin oranges, and sliced green onions.
  • In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes:

Feel free to add more tropical fruits like mango or papaya for extra flavor.
