Instructions:
In a large mixing bowl, combine pineapple chunks, diced ham, shredded coconut, chopped macadamia nuts, mandarin oranges, and sliced green onions.
In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper.
Pour the dressing over the salad and toss gently to combine.
Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes:
Feel free to add more tropical fruits like mango or papaya for extra flavor.
