Ingredients:  

Main Ingredients

  • 1 cup rice cooked
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels frozen or canned
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 large flour tortillas
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup salsa for serving
  • 1 cup sour cream for serving

Instructions: 

  • 1. Heat olive oil in a large skillet over medium heat.
  • 2. Add black beans, corn, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes until heated through.
  • 3. Warm tortillas in a dry skillet or microwave.
  • 4. To assemble, place a portion of rice, bean mixture, and cheese on each tortilla.
  • 5. Roll up the tortillas, tucking in the sides as you go.
  • 6. Serve with salsa and sour cream on the side.

Notes:

Feel free to add any other toppings you like, such as guacamole, lettuce, or diced tomatoes.
