Ingredients:  

Salmon Burgers

  • 1 lb salmon fillet skin removed, chopped
  • 1/4 cup breadcrumbs
  • 1 egg beaten
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 cup fresh basil chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Lemon Basil Mayo

  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp fresh basil chopped
  • 1 tsp lemon zest

Instructions: 

  • 1. In a mixing bowl, combine chopped salmon, breadcrumbs, beaten egg, 2 tbsp mayonnaise, Dijon mustard, lemon juice, chopped basil, salt, and black pepper. Mix well.
  • 2. Form the mixture into 4 patties.
  • 3. Preheat the grill to medium-high heat. Grill the patties for about 4-5 minutes on each side, or until cooked through.
  • 4. In a small bowl, mix 1/2 cup mayonnaise, lemon juice, chopped basil, and lemon zest to make the lemon basil mayo.
  • 5. Serve the salmon burgers on buns with a generous dollop of lemon basil mayo.
