Ingredients:  

Main Ingredients

  • 3 lbs oxtail
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 sprigs thyme
  • 2 cups beef broth
  • 1 can butter beans, drained
  • 2 tbsp soy sauce
  • 1 tsp browning sauce
  • 1 tsp black pepper
  • 1 tsp salt

Instructions: 

  • 1. Heat the oil in a large pot over medium-high heat.
  • 2. Add the oxtail and brown on all sides.
  • 3. Add the chopped onion and garlic, and cook until softened.
  • 4. Add thyme, beef broth, soy sauce, browning sauce, black pepper, and salt.
  • 5. Bring to a boil, then reduce heat to low and simmer for 2.5 to 3 hours, until oxtail is tender.
  • 6. Add butter beans and cook for an additional 15 minutes.
  • 7. Serve hot with rice or your favorite side.

Notes:

This dish is best enjoyed with a side of rice and peas.
