Instructions:
Whisk the eggs, sugar, mirin, and salt in a bowl.
Heat a non-stick pan over medium heat and pour a thin layer of the egg mixture.
Once the egg is set, roll it to one side of the pan.
Pour another thin layer of the egg mixture into the pan and roll it again once set. Repeat until all the mixture is used.
Remove from pan, let it cool slightly, then slice and serve.
Notes:
For a more authentic flavor, you can add a bit of dashi stock to the egg mixture.
