Ingredients:  

Main Ingredients

  • 4 Eggs
  • 2 tbsp Sugar
  • 1 tbsp Mirin
  • 1 pinch Salt

Instructions: 

  • Whisk the eggs, sugar, mirin, and salt in a bowl.
  • Heat a non-stick pan over medium heat and pour a thin layer of the egg mixture.
  • Once the egg is set, roll it to one side of the pan.
  • Pour another thin layer of the egg mixture into the pan and roll it again once set. Repeat until all the mixture is used.
  • Remove from pan, let it cool slightly, then slice and serve.

Notes:

For a more authentic flavor, you can add a bit of dashi stock to the egg mixture.
