Ingredients:  

Main Ingredients

  • 2 lbs Chicken thighs boneless, skinless
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 1 tbsp Ground cumin
  • 1 tbsp Dried oregano
  • 6 cups Chicken broth
  • 2 cans Hominy drained and rinsed
  • 2 tbsp Olive oil
  • to taste Salt and pepper
  • 1 bunch Cilantro chopped, for garnish
  • 1 Lime cut into wedges, for serving

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  • Add minced garlic, ground cumin, and dried oregano. Cook for another minute until fragrant.
  • Add chicken thighs to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Remove chicken from the pot and shred it using two forks. Return shredded chicken to the pot.
  • Add hominy to the pot and simmer for another 20 minutes. Season with salt and pepper to taste.
  • Serve hot, garnished with chopped cilantro and lime wedges on the side.

Notes:

This Chicken Posole is perfect for a cozy dinner. Feel free to add your favorite toppings like avocado, radishes, or shredded cabbage.
