Instructions:
Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic, ground cumin, and dried oregano. Cook for another minute until fragrant.
Add chicken thighs to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
Remove chicken from the pot and shred it using two forks. Return shredded chicken to the pot.
Add hominy to the pot and simmer for another 20 minutes. Season with salt and pepper to taste.
Serve hot, garnished with chopped cilantro and lime wedges on the side.
