Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 2 cups Diced Carrots
  • 2 cups Diced Celery
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Beef Broth
  • 1 cup Frozen Corn
  • 1 cup Frozen Peas
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • to taste Salt and Pepper

Instructions: 

  • 1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the diced carrots and celery. Cook for about 5 minutes.
  • 4. Add the diced tomatoes, beef broth, frozen corn, and frozen peas. Stir to combine.
  • 5. Season with dried basil, dried oregano, salt, and pepper. Bring the soup to a boil.
  • 6. Reduce the heat and let the soup simmer for about 20 minutes, or until the vegetables are tender.
  • 7. Serve hot and enjoy!

Notes:

This soup is great for meal prep and can be stored in the fridge for up to 3 days.
