Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package gnocchi
  • 2 cups spinach, fresh
  • to taste salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
  • Add minced garlic, sliced carrots, and celery. Cook for about 5 minutes until vegetables are tender.
  • Add diced chicken breast to the pot. Cook until chicken is no longer pink.
  • Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.
  • Stir in the heavy cream and gnocchi. Cook until gnocchi float to the top, about 3-5 minutes.
  • Add fresh spinach and cook until wilted. Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes:

For a thicker soup, you can add a slurry of cornstarch and water.
