carrots, sliced

celery, sliced

chicken breast, diced

chicken broth

heavy cream

gnocchi

spinach, fresh
to taste
salt and pepper
Instructions:
Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
Add minced garlic, sliced carrots, and celery. Cook for about 5 minutes until vegetables are tender.
Add diced chicken breast to the pot. Cook until chicken is no longer pink.
Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.
Stir in the heavy cream and gnocchi. Cook until gnocchi float to the top, about 3-5 minutes.
Add fresh spinach and cook until wilted. Season with salt and pepper to taste.
Serve hot and enjoy!
Notes:
For a thicker soup, you can add a slurry of cornstarch and water.
