Ingredients:  

Main Ingredients

  • 2 Cucumbers medium-sized
  • 1 tbsp Salt
  • 2 cloves Garlic minced
  • 1 tbsp Soy Sauce
  • 1 tbsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 1 tsp Sugar
  • 1 tbsp Sesame Seeds toasted
  • 2 stalks Green Onions chopped

Instructions: 

  • 1. Cut the cucumbers in half lengthwise and remove the seeds.
  • 2. Place the cucumbers cut side down on a cutting board and smash them with the flat side of a knife.
  • 3. Cut the smashed cucumbers into bite-sized pieces.
  • 4. In a mixing bowl, combine cucumbers with salt and let sit for 10 minutes.
  • 5. Drain any excess water from the cucumbers.
  • 6. Add garlic, soy sauce, rice vinegar, sesame oil, sugar, sesame seeds, and green onions to the cucumbers. Mix well.
  • 7. Serve immediately or chill in the refrigerator before serving.

Notes:

For extra flavor, add a pinch of chili flakes.
