Instructions:
1. Cut the cucumbers in half lengthwise and remove the seeds.
2. Place the cucumbers cut side down on a cutting board and smash them with the flat side of a knife.
3. Cut the smashed cucumbers into bite-sized pieces.
4. In a mixing bowl, combine cucumbers with salt and let sit for 10 minutes.
5. Drain any excess water from the cucumbers.
6. Add garlic, soy sauce, rice vinegar, sesame oil, sugar, sesame seeds, and green onions to the cucumbers. Mix well.
7. Serve immediately or chill in the refrigerator before serving.
Notes:
For extra flavor, add a pinch of chili flakes.
