Ingredients:  

Main Ingredients

  • 4 cups Arugula fresh
  • 1 cup Cherry tomatoes halved
  • 0.25 cup Parmesan cheese shaved
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 pinch Salt to taste
  • 1 pinch Black pepper freshly ground, to taste

Instructions: 

  • 1. In a large salad bowl, combine the arugula and cherry tomatoes.
  • 2. Drizzle the olive oil and lemon juice over the salad.
  • 3. Toss gently to combine.
  • 4. Top with shaved Parmesan cheese.
  • 5. Season with salt and freshly ground black pepper to taste.
  • 6. Serve immediately.

Notes:

Feel free to add other fresh vegetables or nuts for extra crunch.
